Chorizo with pesto pasta
Confession: I have a weakness for chorizo. It’s one of those foods (like soft cheese) I tried quite late in my adult life and just can’t get enough off. I think it’s one of those foods that can jazz up the plainest meal and make it instantly impressive. I love that chorizo can be eaten at any time of the day (just like pizza – yes/no?). Seriously, it makes a great companion to a cooked breakfast (see a yummy breakfast frittata recipe here) or as a snack for entertaining (a friend of ours cooks sliced chorizo on the bbq grill, A-M-A-Z-I-N-G) or as pictured, as a main meal. This recipe is super easy, only 5 ingredients, all available from your local supermarket (I got mine from Coles). A perfect meal to cook mid-week, when you are time and energy poor! You can leave the chorizo to cook for a bit before literally throwing it all together. What could be easier than that?
